Restaurante Her in Madrid is an interesting mix: part neighbourhood eatery, part elevated dining experience. With Mediterranean roots, Latin touches and a wood-fired oven that quietly delivers serious food, Her stakes its claim as one of Madrid’s most thoughtfully tuned restaurants. It has quietly risen among the restaurants you must visit in Madrid due to the high quality and flavours. 

I visited with a friend on a Saturday for dinner.

Location / Environment

You’ll find Restaurante Her in Salamanca, the posh neighbourhood of Madrid. The setting leans sleek but warm: minimalist wood floors, muted rose-toned walls, tall windows looking out to one of Madrid’s chicest streets. Whether you arrive for lunch or dinner, the space feels light-filled and relaxed. However one big minus is that the tables are placed very close to each other to the point that the noise from the other tables was really annoying from some inconsiderate customers.

The staff was efficient without being particularly formal but the service felt a bit mechanical at certain points.

Restaurante Her’s menu is focused on Mediterranean influences but is layered with global nuances. Think pizzas rooted in Italian technique but finished with Mexican touches and short ribs with lettuce leaves to form your own type of wrap. Seasonality and provenance matter with local ingredients sourced from ethical producers. I also very much like the handwritten style of the menu and the fact that you can order half portions of many dishes, which allows you to try even more.

Restaurant Her – Food

One of the dishes you must try is the crispy eggplant millefeuille with burrata and tomato salsa. The eggplant is light and crispy and the combination with the cheese and tomato is a classic. The top dish of the meal.

Another interesting dish is the burnt cauliflower with chili paste and macadamia sauce. Very nutty and smoky flavor, but I would probably like some acidity to be added as well.

In addition, we got the confit duck rolls with tamarind sauce. The roll was great but the sauce was too acidic and that comes from a person that adds lemon or lime practically to everything.

The pizza with sobrasada, a cured sausage, burrata and confit tomato was quite good. The dough is thin at the bottom with a fluffy crust and you can get all the fatty, rich taste from the sobrasada on top.

We also got the gnocchi with roasted pecorino cream, macadamia nuts and black truffle. Very flavourful sauce and same as all dishes the dough was on spot.

Our first dessert was a cheesecake. A very decent version of a classic dessert option in Spain.

Lastly, we tried the chocolate tart with salt and caramel. I loved the smooth texture of the tart and the balance between sweet, salty and bitter. There was also some acidity from the raspberry ice cream.

Conclusion

Restaurante Her serves food that speaks flavour first, you’re getting substance and a few surprises. Book early since the restaurant is usually booked a few weeks ahead, bring curiosity, and let the dishes do the talking. Worth visiting, but I would avoid the noisy weekends next time and opt for a weekday visit.
