Sacha is a classic restaurant in Madrid. A lot of people consider it a place where chefs like to dine when they are visiting Madrid. The chef, Sacha Hormaechea is a casual and unconventional character that creates dishes based on all the Spanish classics from Galicia and the Basque country.

The restaurant is only open Monday to Friday, so we visited with friends for dinner on a Thursday.

Location/Environment  

The restaurant is located at Chamartin. The design is that of a classic bistro with simple tables and a homey atmosphere.

During the summer, there is a beautiful terrace that is being used as a sitting space for dinner service.

The menu includes a lot of classic dishes, some of them with a twist. The emphasis is on high quality ingredients and utilizing the best produce.

Service 

The service is a mix of casual and old-school professional. All the staff is very familiar with the menu and can provide recommendations and suggestions. After each course, we would receive clean plates and cutlery, depending on the dish we would be having next. You do get a more elevated service level than a typical bistro.

Our first appetizer was the shrimp cocktail. An excellent version with some acidity cutting down the fatiness of the cocktail sauce. Also, there was lettuce at the bottom of the dish, which added freshness.

Next the famous tortilla vaga. An egg and potato tortilla with morcilla sausage, leek and piparra peppers. The egg remains runny in the center and the potatoes are still crispy. The morcilla is thinly sliced so it’s not overpowering and you get acidity from the peppers. There is a reason this dish is a classic at Sacha restaurant.

We also tried the onion soup. It was light, as in not overly buttery, so I enjoyed it. I think the broth could have been more flavorful and my personal preference is for the bread to be crispy on top. In this version, the bread was already soaked in the soup and was fully soggy. Nevertheless, a very good version.

The steak tartare had good texture and nice spice level. Simple but very well executed.

Following that, we had the skate with black butter and cappers. The fish was cooked perfectly and you would get some acidity from the capers. Although this is a classic preparation, I think the sauce would benefit from some lemon juice.

Our last main course was the chops with garlic. Those were small in size, which actually worked very well for us since we were getting full. They were served with round cut fried potato chips and a green salad.

For dessert we tried another famous dish, the tarta dispersa. It was an impressive presentation, equivalent to what you would expect in a Michelin star restaurant. This is a dish with pieces of almond cake, cream and raspberry puree. You can consider it something similar to a deconstructed cheesecake.

Lastly, the traditional Galician filloas. These crepes came with pineapple, cream, and a citrus kind of syrup.

Sacha Restaurant – Conclusion

Sacha is a restaurant that is quite difficult to get a reservation because of its size and popularity. During our visit, I saw both locals and tourists dining there, so that restaurant is a classic for a reason. The dishes are all very carefully prepared and you can experience first hand the emphasis on having the best ingredients. It reminds me of what would be a restaurant combination of the classic San Mames, together with the modern and elegant Angelita. Definitely worth a visit.
