The first Raza restaurant in Madrid opened its doors in 2021. Its menu is focused on a variety of high-quality meat cuts. Recently, Raza opened a new restaurant located near the Santiago Bernabeu stadium. For me, it is among one of the best meat restaurants in Madrid.
Location/Environment
The restaurant at Calle del Barquillo, which is the one I visited, is elegant, designed with a lot of wood details. Once you enter the restaurant the first thing you see is the open fire grill.
This does not make the design less elegant, it rather fits and sets the tone on what to expect from your meal there. That is an experience fully connected to the grill and the element of fire. The restaurant has 3 or 4 different seating areas, including a “barra” in front of the open-fire grill.
The main sitting area has windows, but the rest of the restaurant has overall dimmed lighting and a more cozy feeling.
Service
The service is professional and efficient. There is a good pace between the dishes which allows you to enjoy your experience there. The staff ensures that you have everything you need during your meal.
Menu
The menu includes different appetizer options and various beef cuts from Spain, Argentina, the Netherlands and Finland. There is also an extensive wine list with many great Spanish wines and some international options.
Apart from the regular menu, there are also chef’s suggestions that include a small selection of appetizers and main dishes.
Raza – Food
We started the meal with some grilled scallops, which i really enjoyed. Served on their shell and with the juices from lemon and a homemade chimichurri type of sauce. Just delicious.
The mini steak tartare with quail egg and tartufata, was the perfect bite. The tartare was very juicy and spicy. Additional points for the quantity, since each unit had a good amount of tartare. The quail egg had a very creamy yolk which coated everything perfectly.
The Japanese eggplant was sweet and juicy, served with an aioli type of sauce, without being too garlicky. Raza takes advantage of the longer size of Japanese eggplants and serves them in a braided form. Very good dish, but I would have liked some acidity to cut down the sauce’ richness.
Next up the candied artichokes with the cured cow meat. The artichokes have an interesting flavor and the taste and texture of the cured meat also fits to the dish. Overall the taste was a bit flat and could be better with the addition of more sauce or an additional element for acidity and contrast.
Another appetizer I enjoyed a lot, is the mini Angus beef patties. You can order per unit and these breadless burgers are served with 3 sauces which are the highlight of the dish. A blue cheese, a honey mustard and a black pepper sauce. Those can satisfy pretty much all tastes.
The wagyu beef tartare was very juicy and the contrast of the tartare with the bread and the fries, really added points to this appetizer.
There are several cuts to choose from in terms of the main course so it depends on your preferences and appetite. Our first option was a juicy and tender sirloin steak, that was cooked to a perfect medium rare.
In addition, we got the fillet which was served with its bone and roasted marrow. The roasted marrow is served on a separate dish and the staff will scoop it out and serve it next to your fillet. The meat was cooked well and the combination with the rich bone marrow was fantastic.
Apart from the french fries, we ordered the Robuchon-style mashed potatoes. Very rich with a great creamy texture, it was a must side dish for the meat options.
For dessert, we opted for the chocolate brownie with cookies ice cream. A great option for chocolate enthusiasts, that is truly decadent. I should also note the great presentation of the dish.
The dessert option I liked the least, was the tiramisu. The ladyfingers were too soggy and there was a disproportional amount of cream.
Finally, the dulce de leche cheesecake. Super creamy and for me, it’s much better than the traditional basque cheesecake. My favourite option for dessert at Raza.
Conclusion
All in all, Raza is one of the best meat restaurants in Madrid. Although it is not a cheap option, you can consider it value for money if you take into account the environment and quality of the dishes. Highly recommended.
