Born in late 2018 inside the charming Mercado de Chamberí, Juancho’s BBQ quickly gained acclaim for its burgers, elevating a modest market stall to multiple Juancho’s BBQ spots across Madrid.
We went to Mercado Chamberi but we opted to take the food at home instead of eating there as it was crowded when we visited on a Saturday evening.
Location/Environment
Inside Mercado de Chamberí, Juancho’s BBQ occupies two stalls in the lively market food court. The ambiance is informal yet vibrant. There are rows of communal tables (it does not have its own designated seating space) and you can hear all the market sounds you can expect from a place like this. It’s a spot designed for both solo diners and meat-loving groups.

Interaction with the staff is limited as there is no service at the table in the market. You get a buzzer to pick up your order when ready and you can also order online.
Juancho’s BBQ – Menu
The menu includes various burgers, with the most popular likely being the Bacon Juancheeseburger, previously voted as Spain’s best burger. Overall, all the burgers and the starters have playful names associated with Juancho’s.

Usually, there will be a limited edition burger available as well, either through a collaboration with another restaurant in Madrid or as a seasonal item.
Juancho’s BBQ – Food
The request was for all burgers to be cooked medium; however, all of them were undercooked.
The Bacon Juancheesburger is one of the bestselling items. It comes with a beef patty, cheddar cheese and marinated Iberian pork bits. Very rich and flavorful burger.

The La Trufada is a beef cheeseburger with raclette cheese, truffle and brandy sauce, and extra truffle on top. Between the brandy and the truffle, this was a really heavy option. I would not recommend it.

The La Juanita is the spicy option. It has a beef patty, cheddar, pico de Gallo with habanero pepper and avocado. It wasn’t particularly spicy, so I would say it was average.

Finally, the Chicken Pickle is a grilled chicken with fried pickle ( the fried pickle also comes as a standalone appetizer), coleslaw, cheddar, and Emmy sauce. The fried pickle is quite interesting, and the Emmy sauce inspired by the New York famous Emmy Burger, is complex and has acidic and spicy elements. Probably my favourite option as it was quite saucy and the coleslaw was delicious.

The fries were crispy and well cooked.

Conclusion
Juancho’s BBQ at Mercado de Chamberí delivers burgers in an accessible market setting. The burgers are solid and come with a gourmet twist. A good option if you are not looking for standard quality burger chains, but a more premium option. Nevertheless, Hundred Burger is way ahead in this category.
