Obrar Madrid is part of the city’s new wave of pastry shops that treat baking as a craft. Founded by former fine-dining pastry chefs, Obrar focuses on seasonal pastries, positioning itself somewhere between a traditional panadería and a modern pâtisserie. It has quickly become a reference point for those searching for high-quality pastries in Madrid.
I visited on a weekday for breakfast.
Location / Environment
Obrar is located in the Chamberí area, a neighbourhood that quietly hosts some of Madrid’s best everyday food spots. The space is small and intentionally minimal: neutral tones, clean lines, and a visible counter that keeps the focus on the pastries rather than the décor.

The atmosphere is calm and professional, and service is efficient and knowledgeable, though not overly chatty. During weekends or peak morning hours, queues are common, a sign of popularity, but also something to factor in if you’re short on time or unwilling to wait.

Obrar Madrid – Menu
The menu at Obrar focuses on pastries, variations of croissants, pain au chocolat, tarts and also Bikini toasts, all executed with solid technique and high-quality ingredients. Laminated doughs are the clear strength here: flaky, well-baked, and balanced, without being greasy or overly rich.

Coffee is available and, but it plays a supporting role rather than being a central focus. Prices are above average for Madrid bakeries. While not unreasonable, considering the high quality, I believe it is partially due to the hype of Obrar Madrid and its successful marketing efforts.
Obrar Madrid – Food
Out of the different Bikinis, I tried the mixto with prosciutto cotto, Havarti cheese, and smoked butter. As expected, it’s very rich and the artisanal brioche bread is crispy and flavorful. One of the best Bikinis I had in a long time, especially because of the bread.

The flan in a laminated pastry with Madagascar vanilla was the pastry I tried. The pastry itself was firm, crispy and very delicious while the flan was more neutral than I expected in flavour. While you could feel the vanilla, the overall taste was not as rich and aromatic as I was expecting.

In addition, I ordered a chocolate cookie to go. It had good consistency and a generous amount of chocolate. I would definitely try this again.

Also, the Galleta Obrar, a chocolate, hazelnut, caramel and spices dessert. Everything you would like if you are a dessert person, plus a beautiful presentation for this confectionery.

Conclusion
Obrar Madrid is a pastry shop for people who care about technique, balance, and seasonality. If you’re looking for one of the best pastries in Madrid or a thoughtful pastry to take home, Obrar delivers consistently, although at a high price point. It has become a very popular destination through social media, but it’s not just smoke, as the quality is great. Avoid weekends if you are not willing to wait in line.
