Perched on the second floor of Mercado de San Antón in Chueca, Gustoo combines culinary creativity with a casual market setting. Founded by veteran chefs Aldo Sebastianelli and Jorge Cal, both with vast culinary experience (including working with Dabiz Muñoz at Diverxo), the concept brings upscale techniques into a street‑food format.
We visited on a weekday for lunch with a friend.

Gustoo is located inside the three‑story Mercado de San Antón. It stands out with its minimal, modern stall design. The food court atmosphere is enhanced by communal seating and views of the vibrant market below. It’s informal and, because of that, perfect for locals, expats, and solo diners looking for a quick yet inventive bite.

Gustoo – Menu
The menu is simple but quite innovative. It revolves around customizable bases—bao, brioche, or filloa—paired with one of four signature fillings. There are also some side dishes available.

Gustoo – Food
We tried all three bases. First, the filloa, a traditional Galician crepe, which we combined with the tempura king prawns. This comes with wakame seaweed pickled in pasilla chilli, Mexican green sauce, basil, Sriracha, kimchi foam, and wasabi sesame. I was not expecting it, but this was actually my favorite dish, as it was full of different flavors that complemented each other. Don’t miss it.

We ordered the brioche with the glazed pork rib with blueberry and miso barbecue, pickled mushrooms, kaffir lime mayo, rocket and parmesan. The rib was really tender, and the acidic blueberry combined with the salty miso cuts down the richness. All the elements are made in-house, and the high quality is obvious.

Last but definitely not least, the bao with the Korean fried chicken. The chicken comes with cashew ajoblanco, sautéed lettuce hearts, Majorero cheese from the Canary Islands, mint, and pickled onion in Ribera del Duero wine. The chicken is crispy and juicy, sweet and sticky and again combined amazingly well with the pickled onion, the ajoblanco and the lettuce. Potentially, a different or smaller quantity of cheese might fit better, as it draws your attention from the chicken, but it’s a great dish overall.

Gustoo’s patatas bravas is actually homemade fried gnocchis, with black garlic mayo, brava foam and sichimi togarashi, a Japanese seasoning mix.

Conclusion
Gustoo at Mercado de San Antón delivers elevated street food in a vibrant market setting. The concept of a customizable base with carefully designed global fillings and artisan sides strikes a unique balance between high-end culinary technique and affordable market dining. Highly recommended and one of the best meals I’ve had recently. Whether you are a visitor or a local living in Madrid, you have to try Gustoo if you want to experience fine dining dishes at affordable prices.
