Los Costilla is Madrid’s tribute to ribs and burgers. With slow-cooked costillas, semi-smash burgers and bold sauces, this place stakes a claim in the city’s burger-and-barbecue scene and does so with flair. I regularly order their pulled pork and cheese curly fries, which is one of my favorite sides in Madrid.
I visited on a Saturday for dinner.
Location / Environment
In the chic Salamanca district, Los Costilla feels like a smoking-den for carnivores tucked into one of the city’s more refined corners. Behind its clean façade lies a space that combines minimal industrial design with comfort: dark tables, warm lighting, and a hint of BBQ smoke in the air, even before the food arrives.

The service is simple and unpretentious, in line with what you would expect for a similar type of restaurant.

At Los Costilla the menu includes the signature ribs, a few burger options and various sides. There are also a couple of dessert options.

In short: if you like burgers, ribs or both, this is a place built for you, not for the meat-averse.
Los Costilla – Food
I love the pulled pork and cheese curly fries. Rich flavours, good quality ingredients, and delicious crispy and curly fries.

My favorite burger is the Chicken Sweet Chipotle burger. Slightly spicy with lettuce, pickles, mayochipotle, and a little drizzle of honey. Delicious combination and lovely spicy aftertaste.

The Cinnamon Pulled Pork Burger is one of the best sellers. Nevertheless, it was my least favourite. While everything was well-cooked and of good quality, the combination was, in general, dry. It lacked sauce (although it had a bit of mustard) or some kind of acidity.

The Bacon Ronstar comes with two smash patties, cheddar cheese, a bacon marmalade with rum and smoked barbecue sauce.

The St. Louis ribs are cooked for six hours and finished on the grill, are served with house BBQ or chipotle. Very solid cooking, tender ribs, although when they were served, they were not very hot.

Conclusion
Los Costilla commits to ribs that fall from the bone, burgers with bite and sauces with attitude. Bring appetite, bring heat tolerance, and maybe a friend who shares your willingness to linger over protein and sauce. One of my favorite places in Madrid, together with Hundred Burgers, La Prensa and La Revolucion. Don’t miss the curly fries with cheese and pulled pork.
